National culinary team Chef in charge of new trendy hotel restaurant

In the kitchen, the award-winning chef of the Danish national culinary team, Rasmus Kofoed Sørensen is committed to make dishes with an intense, authentic taste served with a Nordic twist and based on high quality ingredients.

29-year-old Rasmus Kofoed Sørensen is Head Chef at Filini, and together with his team, he has worked hard to ensure a refined menu driven by good taste and Italian simplicity that sends the taste buds on a tour around Italy. Rasmus has experience from restaurant Babette and Geist. He is on the Danish national culinary team and he recently received a bronze medal in the Denmark’s Best Chef 2016 competition. Now, he is ready to give Filini’s guests a unique Italian dining experience.

"Our cuisine is a reinterpretation of the classic Italian kitchen. The dishes offer the best of the Italian and Nordic cuisine. We have spent a long time making sure to have simplicity, intense flavors and a perfect balance. For example, we have worked on getting just the right sweetness from the tomatoes to suit the individual dish. The Nordic touch comes in as a natural addition that complements the dishes well. I am very proud of the result and look forward to welcoming our guests," says Rasmus Kofoed Sørensen, Head Chef at Filini and Executive Chef at Radisson Blu Scandinavia Hotel.

At Filini there is casual dining on the menu. Here you can both sip this year's big comeback, Aperol Spritz, along with eating tasty antipasti - or you can enjoy intense, Italian signature dishes added Nordic finesse together with a glass of full-bodied Barolo La Pieve.

An international trend
The ambition with Filini is to both offer the hotel guests delicious Italian food, but also to attract locals who want to enjoy good food and wine, in trendy and international surroundings.

"In big cities like New York, London and Barcelona it is normal to enjoy a drink at a hotel bar and dine at a hotel restaurant, even if you do not live there. This is a trend that we begin to see more of in Denmark. We have put a huge effort into creating a modern restaurant, where you can get good food, wine and delicious drinks in a casual setting with an international atmosphere. We hope that Copenhagen will take this concept to heart,” says Steen Gartmann, General Manager at Radisson Blu Scandinavia.

To set the right mood, Filini and Radisson Blu have cooperated with the renowned Swedish architectural firm Wingårdh who has brought the Italian and Nordic design together. Beautiful Italian floor tiles has been set in contrast to a rough concrete floor, while subway tiles on the walls fit in well with the light wooden furniture. A lively bar area with lounge furniture and bar for eating made entirely of Italian marble sets an informal and cozy atmosphere, while a more intimate dining area allows you to enjoy pleasant hours in good company.

The largest upgrade ever in the Nordic countries
The establishment of Filini at the Radisson Blu Scandinavia Hotel is part of the Rezidor Hotel Group's largest renovation process ever in the Nordic countries. In the next few years the chain will renovate several of the Radisson Blu and Park Inn by Radisson hotels in both Denmark and in the other Nordic countries. Rezidor Hotel Group is investing 110 million euros in the renovation, while the individual hotel owners also contribute with large investments.

"The goal is to give our guests an even better hotel experience. Many rooms will be renovated and several hotels will get a new international restaurant concept tailored with local dishes and ingredients.
